Greetings Esteve,

Pleas feel free to use the recipe on your site. It is my own composition, but you are welcome to add to it if it needs improving.

PS. There is also a version of SEFFA made with couscous. I'll post the recipe over the next couple of days. It's real easy to make.

SEFFA WITH COUSCOUS
To serve 2
Ingredients:
200g of couscous (Use couscous made from white flour)
200ml of boiling salted water
50g or 100g of butter
50g or 100g of caster sugar
50g or 10g of ground cinnamon
Method:
1/ Place the couscous in a large bowl add the boiling salted water and let it stand for 5 minutes or until the water is absorbed
2/ If you have a steamer, first fluff the couscous in the bowl with a fork to separate the grains, then turn into the steamer and steam on a medium heat. If you start with hot water in the bottom of the steamer, ten minutes should be enough or until steam starts rising from the top of the steamer.
2 A/ if you prefer to use a microwave. After fluffing the couscous, cover the bowl with cling film
And pierce holes for steam and microwave for 4 minutes on full power
3/ Add the butter and some of the caster sugar and use a fork to separate the grains
4/ Put the couscous in a serving dish and shape it into a pyramid or cone
5/ Use the remainder if sugar and the cinnamon to decorate
Enjoy!

Thank you Latif for the recipe. I make Seffa once a year hehe the only difference i do is I steam the vermicelli instead of boiling it. I think it tastes little bit better

All the recipes I've posted can be adapted to suit, and in any case the methods vary from region to region in Morocco according to taste and preferences. I used to always cook rice in a pan on the stove but I found that I can get a better and consistant result if I use a microwave. The only time I don't use a microwave for rice is on a special occasion when I cook it in the oven
